Should I turn on Stripe settings for sales and refunds and fees or should I also turn on Stripe bank transfers?

Turn it all on. It means that it will bring in all the transactions to your Stripe Bankfeed Account. It does not change the outcome of the bank transfer - but will keep it accurate.
